  1. Preheat oven to 350°F and spray a 12-cup muffin pan with cooking spray or line with paper liners.
  2. In a medium bowl, combine flour, Splenda Sweetener, baking powder, and salt.
  3. In large mixing bowl, blend together egg, oil, and milk; add preserves and almond extract and mix well.
  4. Combine flour mixture and stir until smooth.
  5. Pour batter into muffin cups and bake 20-30 minutes or until toothpick can be inserted in center a comes out clean; set to the site to cool.
  6. Serve with sugar free apricot preserves.
