Instructions

  1. Preheat waffle iron according to manufacturer’s directions; spray lightly with cooking spray.
  2. In a bowl, combine flour, baking powder, baking soda, cinnamon, ginger, salt, and nutmeg; stir until evenly blended.
  3. In another bowl, whisk together egg and Splenda Sweetener until blended. Add buttermilk, pumpkin puree, oil, and molasses; whisk until completely blended.
  4. Add buttermilk mixture to dry ingredients, stirring just until moistened.
  5. Pour batter into a hot waffle iron and bake according to manufacturer’s directions. Serve with maple syrup.
