Roasted Sweet Potato Fries with Asian Dipping Sauces

Instructions

To make the sweet potato fries:

  1. Preheat oven to 425°F.
  2. On a rimmed baking sheet, toss potato wedges with oil and season with salt and pepper. Arrange in a single layer.
  3. Bake until browned on one side, about 20 minutes. Turn and bake for an additional 10 minutes, or until wedges can be pierced with the tip of a paring knife.
  4. Serve warm or at room temperature with dipping sauces. Garnish with sliced scallions if desired.

To make the Vietnamese dipping sauce:

  1. In a bowl, combine all ingredients and stir until blended.

To make the creamy spicy sauce:

  1. In a bowl, combine all ingredients and stir until blended.
