Instructions

  1. Preheat oven to 350°F.
  2. In a bowl using an electric mixer, beat butter and ¼ cup Splenda Sweetener on medium speed about 2 minutes or until creamy.
  3. Add flour gradually, mixing on low speed until blended. Mix in vanilla extract and pecans.
  4. Shape dough into 1” balls; place on ungreased baking sheets.
  5. Bake for 20 minutes. Cool slightly, then transfer to a wire rack to cool completely.
  6. In the bowl of a food processor, combine remaining 2 tablespoons Splenda Sweetener and cornstarch; pulse until sweetener is powdered. Transfer to a shallow bowl.
  7. Roll cookies in sweetener mixture.
