Mint Cheesecake Bars

To make the crust:

  1. Preheat oven to 350°F. Spray an 8” square pan with cooking spray.
  2. In a bowl, combine crust ingredients; mix until crumbs are evenly moist. Press into bottom of prepared pan.
  3. Bake 8 minutes or until firm.

To make the filling:

  1. In a bowl, combine cream cheese and Splenda Sweetener; mix until smooth. Add eggs, one at a time, mixing well after each addition. Add vanilla and mint extracts and green food colouring; mix until smooth and uniform in colour.
  2. Pour filling over prepared crust.
  3. Bake for 30 minutes, or until set.
  4. Refrigerate for 2 hours or until firm.
  5. In a microwave-safe bowl, heat chocolate chips on high for 30 seconds. Stir until smooth; if needed, heat chocolate for another 30 seconds to fully melt. Drizzle over cheesecake before cutting into bars.
