  1. In a bowl, whisk together buttermilk, oil, egg, and Splenda Sweetener; mix well.
  2. In another bowl, combine flour, baking powder, and salt.
  3. Add dry ingredients, one-third at a time, to buttermilk mixture, mixing just to moisten after each addition. Lumps are fine; do not overmix.
  4. Preheat a skillet or griddle; lightly oil surface.
  5. Spoon 2–3 tablespoons of batter onto skillet; cook on medium heat until bubbles form on the surface (about 2 minutes). Flip and cook until golden brown on both sides.
