  1. Preheat oven to 350°F. Spray a 12- cup muffin pan with cooking spray or line with paper liners.
  2. In a bowl, whisk together Splenda Sweetener, dry milk powder, buttermilk, applesauce, egg, oil, vanilla extract, and salt until well blended.
  3. Add flour, wheat bran, baking soda, and cinnamon; mix well. Mix in flax seeds and currants or raisins.
  4. Divide batter among prepared muffin cups. Sprinkle tops with bran flakes, if desired.
  5. Bake for 20–25 minutes, until tops of muffins spring back when lightly touched. Serve warm.


Try adding ¼ cup sunflower seeds, or 1 cup blueberries or 1 cup raspberries, or 1 Tbsp. grated orange zest to the batter for flavour variety.
