Pumpkin Cake with Cream Cheese Frosting

To make the cake:

  1. Preheat oven to 350°F. Spray a 13” x 9” pan with cooking spray.
  2. In a bowl, combine Splenda Sweetener, brown sugar, oil, egg substitute, and pumpkin puree; mix until well blended.
  3. Add remaining ingredients and mix well. Pour cake batter into prepared pan.
  4. Bake for 25–30 minutes or until a wooden pick inserted into the center comes out clean. Cool cake completely before frosting.

To make the frosting:

  1. In a bowl using an electric mixer, combine cream cheese and butter; mix until creamy and smooth. Add Splenda Sweetener, powdered sugar, and vanilla extract. Mix to combine.
  2. Add maple flavouring to taste; mix on medium speed until well blended.
  3. Spread frosting over cooled cake.
