Marble Cake

Ingredients
- 90g canola margarine
- 3/4 cup SPLENDA® Low Calorie Sweetener Granular
- 2 eggs
- 2 cup self-raising flour
- 1 cup reduced-fat milk
- 2 tablespoons cocoa
- Red liquid food colouring
- For the icing:
- 220g very light (5% fat) cream cheese
- 1/4 cup SPLENDA®: Low Calorie Sweetener, Granular
- 1 teaspoon reduced-fat milk
Method
Preheat oven to 180°C. Line a 20x30cm cake tin with baking paper.
Cream margarine and SPLENDA® Granular together until creamy. Add eggs one at a time, beating well after the addition of each one. Sift flour and add with milk to the mixture. Mix well. Divide batter into 3 portions. Add a few drops of red food colouring to one, 2 tablespoons of cocoa to the second and leave the third one plain.
Spoon into cake tin, one spoon of each colour at a time to give the marble effect.
Bake for 30 minutes or until cooked. Remove from tin and cool.
Beat icing ingredients together and spread over cake.
Notes
This recipe, when compared a with a traditional recipe has a 43% reduction in kilojoules, a 43% reduction in carbohydrate and a 87% reduction in sugars.
