Banana and Sultana Muffins

Ingredients

  • 1/3 cup canola oil
  • 100g plain low-fat yoghurt
  • 1/2 cup SPLENDA® Granular
  • 2 eggs
  • 2 cups self-raising flour
  • 3/4 teaspoon bicarbonate of soda
  • 3 large ripe bananas
  • 1 cup sultanas
  • cinnamon to taste

Method

Preheat oven to 180°C.

Beat yoghurt and canola oil together until creamy, add SPLENDA® Granular and beat well.

Add eggs one at a time, beating well after the addition of each one.

Mash bananas and add to egg mixture with flour, bicarbonate of soda, sultanas and cinnamon. Mix lightly.

Spoon mixture into non-stick tins and bake for approx. 30 minutes or until cooked.
